The Spinach and Cheese Cannelloni at Costco is Not Quite Good Enough

We bought the Costco Spinach and Cheese Cannelloni for the first time last week just to try something different for dinner.  My wife and I agreed that, while the cannelloni was not bad, we will not buy this ready to cook meal again.

Cooking Instructions

The instructions for cooking the meal are:

  • Preheat your oven to 400F.
  • Remove the clear plastic lid.
  • Cover the meal with aluminum foil.
  • Place on a cookie sheet on the center rack of the oven.
  • Bake for 40-45 minutes until an internal temperature of 165F is reached.

These are pretty much the same cooking instructions that Costco provides for their Chicken Alfredo and Italian Sausage Pasta.  We followed the provided instructions and found that the pasta needed a full hour to reach 165F.

The cannelloni is good but lacking.

The pasta was tender and the marinara was tasty.  The filling is essentially lightly seasoned ricotta cheese with a little bit of spinach thrown in.

Everything about the dish was “okay” but neither my wife or I were satisfied with the meal.  The cannelloni came off as a poorly executed vegetarian lasagna.

I am not opposed to vegetarian meals but this one simple was not filling.  My wife declared that the meal wasn’t worth the calories and I felt like it should have been served as a side dish alongside some grilled chicken.

A sheet of pasta, a little marinara and a bunch of ricotta cheese…really not too much to get excited about.  This meal was not bad like Costco’s Shephard’s Pie but it certainly wasn’t inspiring on any level.

I was surprised that I wasn’t a fan of this meal given how much I enjoy Costco’s spinach and cheese ravioli.

Cannelloni with Caesar Salad

We had a nice Caesar salad with the pasta that I topped with freshly grated Parmigiano Reggiano.

If I bought this again then I would serve it as a side dish instead of a main course.  The pasta would be great with a lean white meat like grilled chicken skewers or some lightly seasoned barramundi.

How Many People Will the Pasta Feed?

The cannelloni typically comes in a tray that holds a about 3.5 pounds of food.

If you are just serving the pasta for dinner then plan on feeding four dissatisfied people.

If you are serving the pasta with a couple of side dishes then you will have enough to feed six happy people.

  1. Wow. I love both their Shephard’s Pie AND the Cannelloni. Funny how tastes differ. I have only disliked the Chicken Alfredo. I thought it qas too bland

    1. Yeah, it’s funny how people perceive flavors….by the way, the Chicken Alfredo is my wife’s favorite!
