We buy the grilled Mediterranean-Style chicken skewers at Costco about every other month and I like to use them for quick and easy weeknight meals. They are also great for an “emergency snack” when I am starving in the middle of the day!
The skewers are high in protein and low in fat along with being pretty tasty.
That sounds like a winning combination to me!

Cooking Instructions
The packaging provides three methods for cooking the skewers:
- Oven (16-18 minutes at 375F)
- Grill (6-8 minutes over Medium High heat)
- Microwave (2 minutes on High)
Even though the packaging says that the oven is the preferred method for heating these up I use the microwave and they turn out just fine.
Something that confuses me about the skewers is that the package says that:
- The chicken is fully cooked.
- The chicken needs to be heated to an internal temperature of 165F.
You should not need to heat the chicken to 165F if it is fully cooked. A lot of times I will eat these cold right out of the refrigerator so I am not sure what is up with the 165F requirement.
Easy Costco Chicken Skewers
Ingredients
- 2 Chicken Skewers per serving
- Caesar Salad or side dish of choice
- 2 tbsp Barbecue Sauce optional
Instructions
- Remove desired amount of skewers from the package
- Prepare salad or side dish of choice
- Heat the skewers in the microwave for three minutes.
- Serve the chicken skewers with salad and barbecue sauce if desired.
Taste Test
Yes, the chicken skewers are very good. The seasoning is delightful and provides plenty of flavor to the white meat. The chicken isn’t exactly juicy but it certainly isn’t dry either.
The portion size is just right and it is fun to eat the chicken off the wood skewer.
The last time I bought these they were served with a Costco Caesar salad for a simple but tasty meal that was on the table in less than five minutes.
My daughter likes to eat these with some barbecue sauce but I enjoy them just as they are.
Other Ways to Serve the Mediterranean Skewers
You can get creative with the skewers and serve them a bunch of different ways. If you take the meat off the stick then you can:
- Make chicken tacos
- Add to pitas with tzatziki sauce and tomatoes for a twist on gyros.
- Toss with Spinach and Cheese Ravioli
- Make chicken quesadillas
- Dice and mix with mayo, celery and diced onions for a tasty chicken salad
- Dice and mix with Spinach and Artichoke Dip
- Toss with Buffalo Sauce and serve with celery, carrot sticks and blue cheese dressing
- Make Sheet Pan Chicken Nachos
- Add to a bowl of Ramen
- Mix with peas, carrots and a creamy sauce them top with mashed potatoes for a delicious Chicken Cottage Pie
- Toss with cucumbers, avocado and sesame dressing and serve in a lettuce wrap
Costco Value
I bought the 28 ounce package of skewers at Costco for $13.99 which works out to a cost of $0.50 per ounce.
You can buy a 6.5 ounce package of grilled chicken skewers at Target for $7.59 which works out to a cost of $1.16 per ounce.
This means that you will save $0.66 per ounce (57%) when you buy the larger package at Costco.
So no need to marinate the chicken skewers?
Love these skewers. Served them Easter Sunday – the adults had ham, the kids went crazy for the chicken skewers! Easy to pop in the oven and just heat up.
