The cook and prep times are based upon using a Costco rotisserie chicken and store bought chicken stock. We are trying to keep things super easy because there is no need for a tasty soup to be time consuming!
Ingredients (Serves 6)
- Soup Base
- 2 cups shredded rotisserie chicken
- 6 cups chicken broth
- 1 tbsp olive oil
- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 garlic cloves, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes with green chilies (such as Rotel)
- 1 cup corn (fresh, frozen, or canned)
- 1 packet taco seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper)
- Juice of 1 lime
- Toppings
- Tortilla strips or crushed tortilla chips
- Shredded cheddar or Monterey Jack cheese
- Sour cream
- Avocado, diced
- Fresh cilantro, chopped
Instructions
- Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the diced onion and bell pepper and sauté for 5–7 minutes until softened. Stir in the garlic and cook for 1–2 minutes until fragrant. - Build the Soup Base
Stir in the taco seasoning, allowing it to coat the vegetables for about 30 seconds. Add the chicken broth, black beans, kidney beans, diced tomatoes with green chilies, and corn. Bring the mixture to a gentle boil. - Add the Chicken
Reduce the heat to low and stir in the shredded chicken. Simmer the soup for 15–20 minutes to allow the flavors to meld together. - Finish with Lime
Stir in the lime juice just before serving for a fresh, zesty kick. - Serve and Garnish
Ladle the soup into bowls and top with tortilla strips, shredded cheese, sour cream, avocado, and fresh cilantro as desired. Serve hot and enjoy!
