Chicken Tortilla Soup: An Easy and Authentic Stove Top Recipe!

Chicken Tortilla Soup

We keep this recipe easy by using the meat from a fully cooked Costco rotisserie chicken and packaged chicken stock.  You are welcome to make your own stock from scratch but this will extend your preparation time considerably.

  • Prep Time: 10 minutes
    (Chopping vegetables, mincing garlic, shredding chicken, and gathering ingredients.)
  • Cook Time: 30 minutes
    (Sautéing, simmering the soup, and assembling toppings.)

Ingredients (Serves 6)

  • Soup Base
    • 2 cups shredded rotisserie chicken
    • 6 cups chicken broth
    • 1 tbsp olive oil
    • 1 medium onion, diced
    • 2 garlic cloves, minced
    • 1 jalapeño, seeded and diced (optional, for heat)
    • 1 tsp ground cumin
    • 1 tsp chili powder
    • 1/2 tsp smoked paprika
    • 1 (14.5 oz) can fire-roasted diced tomatoes
    • 1 (15 oz) can black beans, rinsed and drained
    • 1 cup corn (fresh, frozen, or canned)
  • Toppings
    • Tortilla strips or crushed tortilla chips
    • 1/2 cup shredded cheddar or Monterey Jack cheese
    • 1 avocado, diced
    • Fresh cilantro, chopped
    • Lime wedges

Instructions

  1. Sauté the Aromatics
    Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until softened. Stir in the garlic and jalapeño (if using) and cook for another 1–2 minutes until fragrant.
  2. Build the Soup Base
    Add the ground cumin, chili powder, and smoked paprika to the pot, stirring for 30 seconds to toast the spices. Stir in the fire-roasted diced tomatoes, chicken broth, black beans, and corn. Bring the mixture to a gentle boil.
  3. Add the Chicken
    Reduce the heat to low and stir in the shredded rotisserie chicken. Simmer the soup for 15–20 minutes to allow the flavors to meld together.
  4. Serve and Garnish
    Ladle the soup into bowls and top with tortilla strips, shredded cheese, avocado, and fresh cilantro. Serve with lime wedges on the side for a zesty squeeze of flavor.
