Ingredients (Serves 6)
- Soup Base
- 2 cups shredded rotisserie chicken
- 6 cups chicken broth
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 jalapeño, seeded and diced (optional, for heat)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- Toppings
- Tortilla strips or crushed tortilla chips
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1 avocado, diced
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until softened. Stir in the garlic and jalapeño (if using) and cook for another 1–2 minutes until fragrant. - Build the Soup Base
Add the ground cumin, chili powder, and smoked paprika to the pot, stirring for 30 seconds to toast the spices. Stir in the fire-roasted diced tomatoes, chicken broth, black beans, and corn. Bring the mixture to a gentle boil. - Add the Chicken
