Ingredients (Serves 6)
- Soup Base
- 2 cups shredded rotisserie chicken
- 6 cups chicken broth
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- 1 cup uncooked white or brown rice
- Salt and pepper to taste
- Optional Add-ins
- 1 cup spinach or kale, chopped
- Juice of 1/2 lemon (for brightness)
Instructions
- Sauté the Vegetables
Heat the olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened. Stir in the minced garlic and cook for another 1–2 minutes until fragrant. - Build the Broth
Add the chicken broth, dried thyme, parsley, and bay leaf to the pot. Stir to combine, then bring to a gentle boil over medium-high heat. - Cook the Rice
Add the uncooked rice to the pot and stir. Reduce the heat to low, cover, and let the soup simmer for 20–25 minutes, or until the rice is tender. Stir occasionally to prevent the rice from sticking to the bottom. - Add the Chicken
Stir in the shredded chicken and let it heat through for 5 minutes. If using optional ingredients like spinach or kale, add them now and cook until wilted. - Season and Serve
