Ingredients (Serves 6)

    • 1 cup dry pasta (e.g., small shells or ditalini)
  • Cheese and Garnish
    • 1/2 cup grated Parmesan cheese
    • 1 cup shredded mozzarella cheese (for topping)
    • Fresh basil, chopped (optional, for garnish)
  • Optional Add-ins
    • 1 cup spinach or kale (for extra greens)
    • 1/2 cup diced zucchini or carrots

Cooking the Chicken Parmesan Soup

Instructions

  1. Prepare the Base
    • Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 3–4 minutes.
    • If using the optional zucchini or carrots, add to the pot after sautéing the onion and garlic. Cook for about 3–4 minutes until they begin to soften.
    • Stir in the garlic, oregano, and red pepper flakes. Cook for 30 seconds until fragrant.
  2. Simmer the Soup
    • Add the crushed tomatoes, chicken broth, and tomato paste. Stir to combine and bring the mixture to a gentle boil.
  3. Cook the Pasta
    • Add the dry pasta to the soup and simmer for 10–12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
  4. Add the Chicken (and Spinach/Kale if using)
    • Stir in the cooked, shredded chicken and let it heat through for 2–3 minutes. If you are using the optional spinach or kale, add right after you stir in the shredded chicken. This ensures the greens wilt perfectly without becoming overcooked.
  5. Cheese It Up
    • Stir in the Parmesan cheese until melted. Taste and adjust seasoning with salt and pepper as needed.
