Cooking Instructions for Costco’s Enchilada Bake With Rotisserie Chicken!

We had the Costco Enchilada Bake with Rotisserie Chicken for dinner last week and enjoyed the meal.  All of us were surprised by the meal and while we liked it, agreed that it could have been just a little better.

Cooking Instructions

The instructions for cooking the meal are:

  • Preheat your oven to 400F.
  • Remove the clear plastic lid.
  • Cover the meal with aluminum foil.
  • Place on a cookie sheet on the center rack of the oven.
  • Bake for 50-60 minutes until an internal temperature of 165F is reached.

We followed the provided instructions and found that the enchiladas only needed 50 minutes to reach 165F.

  • 1 tray Costco Enchilada Bake
  • 1 package Salad Kit Optional
  • 1 cup Guacamole Optional

Instructions
 

  • Preheat your oven to 400F.
  • Remove the plastic lid from the Enchilada Bake.
  • Tightly cover the tray of enchiladas with aluminum foil.
  • Place the foil covered enchiladas onto a baking sheet and place in the oven.
  • Bake the enchiladas for 50-60 minutes until an internal temperature of 165F is reached.
  • Let the enchiladas cool for 5-10 minutes and serve with salad and guacamole.

Taste Test!

The enchilada bake is extremely good.

What surprised all of us is that these enchiladas are LOADED with chicken.  I am talking about being so overstuffed with chicken that it was borderline ridiculous.

The enchiladas consist of mounds of chicken meat rolled up in a flour tortilla along with some enchilada sauce and a sprinkling of corn, peppers and black beans.

I am a hardcore carnivore and even I thought the enchiladas could have used a little less chicken and a few more veggies, beans and even some rice.

Did I mention that these have a lot of chicken?

Ready to Eat Enchilada Bake with Rotisserie Chicken

This dish is not quite as good as Costco’s Ravioli Lasagna or Chicken Alfredo but it is much better than the Spinach and Cheese Cannelloni or Shephard’s Pie.

The enchiladas are highly filling and satisfying.

You can make this a complete meal by serving with a salad and guacamole.

Overall this is a relatively healthy meal as far as “Take and Bake” options go.

How Many People Will the Meal Feed?

You get about four pounds of enchiladas per tray.

If you serve half pound portions along with a couple of sides then you can feed eight people but nobody will get to have second servings.

We just served the enchiladas by themselves to four people and had plenty of leftovers.  This was a nice change from the time we had Costco’s massive Chicken Pot Pie and were eating leftovers for a week.

  1. So tried these tonight with the wife and thought they were god awfully terrible. The cilantro must have been ingredient 1. There was a lot of chicken but the cilantro was so strong I couldn’t taste it. I threw away half the package.

    1. It is WAY too hot to the point of burning your mouth and esophagus. I like spicy Mexican food but this was crazy hot. We ate a little of it and wound up throwing most of it in the garbage. Was up all night then with severe burning gastric reflux and gobbling Tums. I’ve eaten many enchiladas over the years but never anything as disgusting as this. In my opinion you would be better off flushing a $20 bill down the toilet than buying this thing.

        You thought they were hot? Have you ever eaten Mexican food before? I didn’t think they were hot at all and I don’t like teal spicy food. I thought they were very good and will buy them again

        That’s a bummer. I love it and it’s honestly not spicy enough for me. I add jalapeño and chipotle hot sauce to mine. Bomb.com.

  3. I love the Chicken Enchilada Bake. It has a great taste. I buy it and eat it during the week with a salad. Makes a great meal.

    Some of the complaints about too much cilantro or being too spicy lead me to believe that these are probably prepared on site at the local Costco. I live in Salinas, California where the majority of the residents and thus employees are of Mexican descent. Ours was DELICIOUS! I suspect some people just don’t have the right touch when it comes to making certain ethnic dishes.

    We love this as a good go to dish, with a little help. I serve mine with some shredded lettuce, sour cream and some quacamole, on the side so people can mix it up a little! also personally I like mine with a few lime tortilla chips

    I would assume all the Costcos make them differently. My Costco in Washington State makes them with rice included. They also have layers of corn tortillas like making lasagna instead of individually wrapped. Yes, they are a little spicy, but mexican food should be. I do not care for ‘hot’ spicy. The spices did not burn my throat, just made my mouth itself warm. I absolutely LOVE the enchilada bake and buy one every time I go to Costco. However, the price has increased so high that I am not sure they are worth the price any longer. It’s $26.00 for one where I live now. Used to be A LOT less! I love they don’t skimp on the rotisserie chicken and full of flavor. If you do not like spicy enchilada sauce then don’t buy it. I made a version of this..Mine was with green salsa verde instead of red enchilada sauce, I used black beans, and instead of spanish rice, I made my own cilantro lime chicken. I also used flour tortillas for the layering instead of corn. They were absolutely AMAZING and not spicy at all. I included sour cream when making the salsa verde to make it creamy.
