I spotted these Chicken Quesadillas at Costco the other day and bought a package to make for a few lunches. Quesadillas are incredibly easy to make by yourself so I felt a little silly buying these but I figured they were worth a try and might save me a little bit of time in the kitchen!

What Comes in the Tray of Quesadillas?
You get about 2.5 pounds of food per tray. The food consists of:
- Eight Servings of Chicken Quesadillas
- Two Containers of Kirkland Chunky Guacamole
- One Container of Sour Cream
- One Container of Salsa
The quesadillas contain chunks of cooked, seasoned chicken with shredded cheese tucked into a large flour tortilla. They use four quesadillas per tray which are then cut in half to create the eight servings.
Cooking Instructions
Although the chicken is already fully cooked you still want to toast the quesadillas to give some crunch to the tortilla and melt the cheese.
Cooking Instructions
- Spray a skillet with Pam or non-stick cooking spray of choice.
- Heat the skillet over Medium-Low heat for 10 minutes.
- Add the 2-3 quesadilla sections to the skillet and toast for 2 minutes per side.
- Repeat for the remaining quesadillas.
- Top with guac, sour cream and salsa then serve.
I like cooking over Medium-Low heat instead of High because it helps the cheese melt just in time for the tortilla to get toasted.
Costco Chicken Quesadillas {Extra Tasty!}
Ingredients
- 1 tray Chicken Quesadillas
- 2 tbsp Canola Oil
- 1 cup Guacamole
- 1 cup Sour Cream
- 1 cup Salsa
Instructions
- Add 1/2 tablespoon of oil to a skillet and warm over Medium Heat.
- Place two quesadillas in the skillet and warm through for three minutes per side until the tortillas are toasted and the cheese has melted.
- Repeat for the remaining quesadillas.
- Cut each quesadilla in half and top with the sour cream, guacamole and salsa.

Costco’s Chicken Quesadillas are surprisingly tasty!
The tortilla toasts up beautifully to give a satisfying crunch. The cheesy and meaty filling is savory and fun to eat.
I applaud Costco’s inclusion of three types of sauce. At first I thought this was overkill but discovered that the three sauces made for a beautiful presentation and the extra flavors worked extremely well together!
The two sections I cooked up were more than enough food for my lunch and were much better than the food served at a few of the Mexican themed restaurants around here.

There are many delicious side dishes that would pair well with chicken quesadillas. Here are some suggestions:

Roasted Vegetables: A healthy and delicious side dish made with a variety of vegetables such as bell peppers, zucchini, and onions, tossed in olive oil, garlic, and Mexican spices, then roasted to perfection. It’s a great option for adding some veggies to your meal.
Mexican Coleslaw: A crunchy and tangy coleslaw made with cabbage, carrots, onions, and a dressing made with lime juice, cilantro, and mayonnaise. It’s a refreshing and light side dish that most people love.

How Long do they Last in the Refrigerator?
The quesadillas are labelled with a “Pack Date” that reflects when they were prepared in the deli. The tray is also marked with a “Sell By” date that is always three days after the Pack Date.
In general you can expect the quesadillas to last about 4-5 days past the Sell By date if they are properly stored in the refrigerator. Once the quesadillas have been cooked you will want to consume the leftovers within two days or else the tortilla will get soggy and unappetizing.

One serving of the quesadillas have the following nutritional information:
- Calories: 690
- Fat: 41g
- Cholesterol: 125mg
- Sodium: 1420mg
- Carbohydrates: 42g
- Protein: 37g
These values are really just estimates as the calories will vary depending upon how much of each condiment you use. For the lowest possible calorie count stick with the salsa and skip the sour cream and guacamole.

Costco Value
A quick comparison suggests that the quesadillas are a repackaged version of Costco’s Chicken Street Tacos as both meals have seasoned chicken, cheese, tortillas and multiple sauces.
The Street Tacos cost $5.49 per pound compared to $5.99 per pound for the Chicken Quesadillas. The extra cost of the quesadillas comes from the two containers of guacamole which, if you are a big fan of guac, seems reasonable.
Since you get 2.5-2.75 pounds of food the tray of quesadillas will cost you around $16. Spread that cost across eight servings and you get a cost of about $2 per serving.
You could absolutely make your own quesadillas at home from scratch for less money so what you are paying for here is convenience.
These quesadillas were perfectly fine and I wouldn’t hesitate to serve them to my family. However, while I enjoyed them, they were not special enough to make me want to buy them again.
