Another Great Costco Rotisserie Chicken Dinner Idea! Creamy And Satisfying Chicken Tetrazzini!

Chicken Tetrazzini is a creamy and satisfying pasta dish that’s perfect for using up a shredded Costco rotisserie chicken. This dish combines mushrooms, pasta, and a creamy sauce, all baked to golden perfection.

I have the recipe written using two cups of shredded chicken but you can use three cups if you want to make this a meatier dish.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 12 ounces spaghetti or any pasta of your choice
  • 3 tablespoons butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup heavy cream (or half and half for a lighter option)
  • 1/2 cup white wine (optional, can replace with additional broth)
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13-inch baking dish or a similar size casserole dish.
  2. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 2 minutes less than the package directions. Drain and set aside.
  3. Prepare the sauce:
    • In a large skillet or saucepan, melt the butter over medium heat. Add the onion and garlic, cooking until the onion is translucent, about 5 minutes.
    • Add the sliced mushrooms and sauté until they are soft and browned, about 5-7 minutes.
    • Sprinkle the flour over the vegetables and stir to coat. Cook for another 2 minutes to remove the raw flour taste.
    • Slowly whisk in the chicken broth and white wine (if using). Bring the mixture to a simmer and let it thicken for about 5 minutes.
    • Stir in the heavy cream, salt, pepper, and nutmeg. Let the sauce simmer gently until it reaches a creamy consistency, about 3-4 minutes.
  4. Combine the ingredients:
    • In a large mixing bowl, combine the cooked pasta, shredded chicken, frozen peas, and the creamy mushroom sauce. Mix well to ensure everything is evenly coated.
  5. Assemble the dish:
    • Transfer the pasta mixture to the prepared baking dish. Sprinkle grated Parmesan cheese evenly over the top, followed by the breadcrumbs, which have been mixed with the olive oil to help them brown.
  6. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the sauce is bubbly.
  7. Serve:
    • Let the Tetrazzini cool slightly before serving. Garnish with chopped fresh parsley for a touch of color and freshness.
