Costco sells Minh’s Mini Chicken Eggrolls in a box with 50 pieces. I figured that the mini egg rolls would be easy to heat up in the air fryer and be a great snack to munch on during the football game.
Each mini eggroll is about two inches long which make them the perfect size for a two bite snack!
Calories and Nutrition
Let’s take a closer look at what comes in this 46 ounce box.
Three mini egg rolls is a single serving and you get about 17 servings per box. The nutrition facts for a single serving are:
- Calories: 130
- Fat: 5g (7% DV)
- Cholesterol: 10mg (3% DV)
- Sodium: 290mg (13% DV)
- Carbohydrates: 17g (6% DV)

I was pleased to see that the egg rolls were low in sodium and cholesterol. They look like they will be some guilt free (or at least low guilt) snacks.

Cooking Instructions
The package provides instructions for three different cooking methods (oven, deep fry, microwave) but not for an air fryer. I used an air fryer and will share those instructions as well.
Conventional Oven Instructions
- Preheat you oven to 425F
- Arrange egg rolls on a baking sheet
- Bake for seven minutes.
- Flip and bake for seven more minutes.
- Let cool and serve
Deep Frying Instructions
- Heat your oil to 375F
- Place the eggrolls into the oil in batches being careful not to overfill.
- Fry for six minutes
- Drain onto paper towels and serve
Microwave Instruction
I do not advise cooking these in the microwave as the wrapper will not get crispy. If you must use a microwave then the instructions are:
- Place the eggrolls on a microwave safe plate
- Place the plate in the microwave and heat on High for 75 seconds
- Let cool and serve
Air Fryer Instructions
- Spray the eggrolls with a little Pam to help crisp the outside.
- Heat your air fryer to 450F.
- Cook the eggrolls for 12 minutes
- Allow to cool and serve.
Taste Test
I cooked the egg rolls in my Ninja Foodie air fryer which was perfect for getting the wrappers golden and slightly crispy.
I served the egg rolls with a bowl of Kinder’s Teriyaki sauce for dipping and we dug in!
And then I was really disappointed.
The filling for the egg rolls is best described as “mush”. There wasn’t any texture to the filling, it was just a glob of “stuff”. The egg rolls didn’t taste bad but there also wasn’t anything appetizing about them.
I ate a couple just for this review and tossed the rest of the batch to my three dogs. The dogs thought the eggrolls were delicious!
The failure of these egg rolls was magnified by the fact that we had spent last week enjoying the Bibigo steamed dumplings which were spectacular. To go from such an incredible snacking delight to these egg rolls was massively disappointing.
Serving Ideas
One way to salvage the egg rolls would be to dress them up. Here are a few suggestions:
Appetizer Platter: Arrange the egg rolls on a platter along with some dipping sauces such as sweet and sour sauce, teriyaki sauce, or spicy mayo.
Asian-inspired Salad: Chop the egg rolls into smaller pieces and toss them into an Asian-inspired salad. Combine mixed greens, shredded carrots, sliced cucumbers, and edamame. Top with the mini chicken egg rolls and drizzle with a sesame ginger dressing for a tasty salad.
Rice Bowl: Serve the egg rolls over a bed of steamed rice or fried rice. Add some sautéed vegetables such as bell peppers, onions, and broccoli for a flavorful rice bowl.
Bento Box: Pack the egg rolls into a bento box along with some steamed vegetables, sushi rice, and pickled ginger for a fun lunch on the go.
Noodle Stir-Fry: Stir-fry the egg rolls with some cooked noodles, bell peppers, bean sprouts, and green onions. Toss with a stir-fry sauce and garnish with sesame seeds for a satisfying noodle dish.
Slider-style Sandwiches: Place the mini chicken egg rolls between slider buns, and top with shredded lettuce, sliced tomatoes, and a dollop of mayonnaise or a drizzle of hoisin sauce. Serve as mini chicken egg roll sliders for a unique twist on traditional sandwiches.
Party Platter: Arrange the mini chicken egg rolls on a large platter, and serve with an assortment of other Asian-inspired appetizers such as dumplings, spring rolls, and potstickers. Offer a variety of dipping sauces for guests to choose from for a delicious party platter.
Costco Value
The 50 count box of mini egg rolls cost me $9.99 at Costco which works out to a price of $0.20 per piece.
The product sold at Costco comes in a 46 ounce box. You can buy a 44 ounce box of Minh’s full sized chicken eggrolls at BJs Wholesale for $9.99.
Between the quality of the product and the equivalent pricing at other stores I do not believe that these are a Costco value buy.
Thanks for this review – I agree 100%! Just mush inside – no real flavor and a mushy texture. I ate three. Threw 47 away!!
