Chicken Stuffed Peppers

Recipe: Chicken Stuffed Peppers

Ingredients:

  • 8 large bell peppers, halved and seeded
  • 2 cups shredded Costco rotisserie chicken
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the halved bell peppers in a baking dish, cut side up.
  3. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, half of the cheese, salsa, cumin, chili powder, salt, and pepper. Mix well.
  4. Spoon the chicken mixture into each bell pepper half, packing it down gently.
  5. Sprinkle the remaining cheese over the stuffed peppers.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
