The curry features tender chicken breast strips in a flavorful coconut curry made from coconut milk, basil and Thai spices. The curry is extremely mild on the spiciness scale.

At Costco you get 32 ounces (2 pounds) of curry and a single serving is 140 grams, about 2/3 of a cup. The combined contents of both pouches holds about 6.5 servings.
The nutrition facts for a single serving are:

- Fat: 7g (9% DV)
- Cholesterol: 70mg (23% DV)
- Sodium: 430mg (19% DV)
- Carbohydrates: 5g (2% DV)

This Thai-Style Coconut Chicken Curry has significantly less salt than Sukhi’s Indian Style Coconut Chicken Curry which is also available at Costco.
Ingredient List
The curry has the following ingredients:
- White meat chicken
- Coconut curry sauce
- Coconut milk
- Water
- Coconut sugar
- Lime juice
- Spices
- Tapioca starch
- Ginger
- Yeast extract
- Basil
- Onion
- Garlic
- Salt
- Lemongrass
- Tumeric
- Xanthan gum
- Black pepper
- Monkfruit extract
The curry is certified gluten free and certified paleo.
Preparing and Serving
The curry is already fully cooked but the preparation is a little weird. There are two pouches of cooked chicken and two pouches of curry sauce in the package.
To prepare half of the curry then these are the steps to follow:
- Open the pouch containing the chicken and drain off the cooking liquid.
- Break up the chicken into bite sized portions using a fork or your hands.
- Place the chicken in a microwave safe bowl and heat on High for 2 minutes.
- Open the curry sauce packet and pour it over the chicken.
- Use a fork to thoroughly mix the curry with the chicken.
- Microwave on High for 90 seconds.
- Serve.
Taste Test
The chicken is extremely tender and the curry has a delightful coconut and basil flavor. The dish is creamy, almost velvety and extremely mild.
I am not an expert of Thai cuisine and cannot speak to how authentic the dish is, but it does have many of the flavor notes that I associate with Thai food.
The two complaints that I have about the dish are:
- Not Enough Sauce
- Preparing the Chicken is Funky
Not Enough Sauce
The picture above shows all of the chicken and curry sauce that you get with one pouch of each and you can see how low in he bowl you have to go to get to the sauce.
While there is plenty of sauce to completely coat the chicken, if you serve this over rice then it will be a little dry. I read some other reviewers who remedied his situation by adding some more coconut milk to the mix.
Funky Chicken
The chicken breast is cooked Sous Vide and quite tender.
The process of having to drain and then break up the chicken is unexpected and a little weird. I felt like I was playing with mystery meat as I was breaking up the block of cooked chicken.
Costco Value
The 32 ounce package of curry has a regular Costco price of $13.99 which works out to a cost of $0.437 per ounce.
You can buy a 16 ounce bag of this curry at Target for $9.99 which works out to a cost of $0.624 per ounce.
This means that you will save $0.187 per ounce (about 30%) by purchasing the larger bag at Costco. Since this curry comes in two pouches and can be frozen for later use it makes sense to buy the product at Costco.
