Instant Pot Cooking Instructions for Morton’s Corned Beef Brisket from Costco

I picked up package of Morton’s corned beef brisket at Costco the other day. My mom had been telling me how easy it was to cook a corned beef in an Instant Pot and I figured it would be a fun and tasty experiment.

Cooking Instructions

The packaging provides cooking instructions for the stovetop, instant pot and slow cooker.  Regardless of which method you use, once the meat is done cooking you want to slice it AGAINST the grain for maximum tenderness.

Oven Instructions

  • Place corned beef in a pot and cover with water.
  • Add contents of seasoning pack to the pot.
  • Bring water to a boil
  • Reduce heat and simmer for four hours until an internal temperature of 160F is reached.
  • Remove the corned beef from the water.
  • Place the meat on a baking sheet and bake at 350F in an oven for 15 minutes to brown

Instant Pot Instructions

  • Place corned beef in the Instant Pot and add 1/2 cup water.
  • Add contents of seasoning pack to the pot.
  • Heat on High for 60 minutes (3-4 pound cut) or 90 minutes (5-6 pound cut).
  • Remove the corned beef from the Instant Pot.
  • Place the meat on a baking sheet and bake at 350F in an oven for 15 minutes to brown

Slow Cooker Instructions

  • Place corned beef in the slow cooker and cover with water.
  • Add contents of seasoning pack to the pot.
  • Set the slow cooker to High
  • Simmer for 6-8 hours until an internal temperature of 160F is reached.
  • Remove the corned beef from the water.
  • Place the meat on a baking sheet and bake at 350F in an oven for 15 minutes to brown.

How to Serve

The traditional ways of using the corned beef are:

  • Serving with stewed cabbage, potatoes, onions and carrots.
  • Slicing the meat to make a pile of Reuben sandwiches.
  • Dicing the meat and cooking with onions and potatoes to make corned beef hash and serving with eggs.

I decided to give things a twist by making corned beef tacos with a cabbage and carrot Cole slaw that were topped with a touch of cream style horseradish.

The meat was incredibly flavorful and super tender while the crunchy cabbage slaw provided a nice textural contrast.

  • 1 lbs Cole Slaw Mix + Dressing
  • 10 Small Tortillas
  • Horseradish Cream Sauce

Instructions
 

  • Add the corned beef to the instant pot along with 1/2 cup water.
  • Cook the corned beef for 60 minutes.
  • While the corned beef is cooking prepare the Cole Slaw.
  • Remove the corned beef from the Instant Pot and slice against the grain.
  • Assemble the tacos and top with a touch of horseradish cream sauce if desired.

The corned beef costs $5.99 per pound.  The package I bought weighed 3.51 pounds for a price of $21.02.

While almost $6 per pound for a brisket flat is a little bit on the expensive side it isn’t unreasonable.  If you want to save some money then you can probably find some better prices at your local grocery store around St Patrick’s day and stock up your freezer.
