On my last trip to Sam’s Club I picked up the Member’s Mark brand Bacon Wrapped Pork Loin Filet. The meat was well presented and the combination of pork, a citrus brine and peppered bacon sounded delicious.
Cooking Instructions
The packaging for the loin has the following cooking instructions:
- Preheat oven to 400F
- Take the loin out of the plastic bag and place it on a roasting pan.
- Roast the loin on the center rack of the oven for 35-45 minutes until an internal temperature of 145F is reached.
- Remove the loin from the oven and let site for 5 minutes before serving.
The suggestion to cook for 35-45 minutes was horribly wrong for me as it took 70 minutes for the loin to reach an internal temperature of 145F. I suggest planning for at least 60 minutes of cooking time.
I modified the cooking instructions a little.
I put the loin on a wire rack that was resting on an aluminum foil lined baking sheet.
The foil helped make for an easy cleanup while the wire rack kept the bottom of the loin from sitting in rendered bacon grease.
The roast had a beautiful color and aroma when it was finished cooking. The bacon was firm but not crunchy.
Taste Test
We sliced the loin and served it with a cool, creamy broccoli salad. I had high hopes for the loin when I picked it up at Sam’s Club and I was not disappointed!
The peppered bacon gave the loin an unexpected bite both in terms of spiciness and texture. The citrus brine provided a lovely flavor contrast and kept the meat incredibly moist. The loin itself was exceptionally tender and was a delight to eat.
I checked the reviews on the Sam’s Club website and saw that this product had 398 reviews with 342 of them being either 5 or 4 stars. These ratings give the product an 85% customer satisfaction rating.
How Many People Will the Bacon Wrapped Pork Loin Serve
Four ounces of the loin is considered a single serving but the servings per package varies.
The loin I bought weighed 2.33 pounds which comes out to 9 servings. Personally I wouldn’t count of this to serve 9 people but, if I had plenty of side dishes, I think it would feed 6 people just fine.
