You can always find the Amylu pre-cooked chicken meatballs in “club size” packs at Costco but they are always rotating out the flavors so if you see the Teriyaki-Pineapple version in the warehouse then make sure to grab a pack!
If the Amylu version of this product isn’t available in your warehouse then there is usually an equivalent version from Aidells that will work fine in this recipe.
The Costco Club Pack of these meatballs weighs 46 oz and contains two packets with each packet containing roughly 23 ounces. Each 23 ounce pack has about 25-30 meatballs. The smaller 10 ounce packages from Kroger or Albertsons only contain about 12 meatballs so you will want to buy two packs for this recipe.
Ingredients (Serves 4)
- 1 (23 oz) package Amylu Teriyaki Pineapple Chicken Meatballs (precooked)
- 2 cups cooked jasmine or white rice (uncooked: ~1 cup)
- 1 cup canned pineapple chunks (drained) or fresh diced pineapple
- 1/3 cup teriyaki sauce (bottled or homemade)
- 2 tbsp water
- 2 tsp cornstarch (optional, for thickening sauce)
- 2 tbsp chopped green onions (for garnish)
- 1 tsp sesame seeds (for garnish)

Instructions
- Cook the rice
Prepare rice according to package instructions. Keep warm. - Heat the meatballs
- Microwave method: Place meatballs in a microwave-safe bowl. Cover with a damp paper towel and microwave on high for 2–3 minutes, or until heated through.
- Stovetop method: Add meatballs to a skillet with 2 tbsp water. Cover and steam over medium heat for 6–8 minutes, flipping occasionally.
- Make the sauce (optional)
For a thicker glaze:- In a small saucepan, whisk together teriyaki sauce, water, and cornstarch.
- Bring to a simmer and stir until thickened (2–3 minutes).
Skip this step if using a thick, ready-to-serve sauce.
- Warm the pineapple
Add pineapple chunks to the skillet during the last 2 minutes of heating to lightly caramelize and warm them. - Assemble the bowls
- Scoop rice into four bowls.
