Traeger Smoked Pineapple with Cottage Cheese

Pineapple slices are seasoned with a dry rub then smoked on a Traeger pellet grill for one hour. The smoked pineapple is sliced and served on top of cold cottage cheese for a flavor explosion.

Ingredients
  

  • 6 Pineapple Slices
  • 16 oz Medium Curd Cottage Cheese
  • Seasoning Blend Recipe Below
  • 3 tbls Brown Sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Chipotle Powder

Equipment

  • Traeger Pellet Grill

Method
 

  1. Combine the seasoning ingredients and mix well.
  2. Season both side of the pineapple slices.
  3. Turn on your Traeger and set the temperature to 225F.
  4. Put the seasoned pineapple slices on the Traeger and smoke for one hour.
  5. Take the pineapple slices off the Traeger, slice and serve on top of a platter of cold cottage cheese.

Notes

This is a wonderful starter/salad/appetizer that is easy to prepare.
