How to Cook Costco Stuffed Peppers {One BIG Tip!}

Stuffed peppers from Costco are transferred to an oven safe dish and baked to perfection.

Ingredients
  

  • 1 tray Costco Stuffed Peppers
  • 1 lb Fresh Asparagus
  • 1 bag Frozen Corn

Equipment

  • 1 Oven Safe Baking Dish

Method
 

  1. Grease an oven safe baking pan with a quick spray of Pam.
  2. Preheat your oven to 400F.
  3. Transfer the stuffed peppers from their plastic tray to the oven safe dish.
  4. Tightly cover the dish with aluminum foil.
  5. Bake the peppers for 60 minutes until an internal temperature of at least 165F is reached.
  6. Steam the asparagus and toss with melted butter, lemon juice, salt and pepper.
  7. Prepare the frozen corn according to package directions.
  8. Remove the stuffed peppers from the oven, allow to cool for 5-10 minutes and serve with sides.

Notes

Here are a few tips to make sure the peppers come out great!

Bake in a covered dish:

Make sure you cover the dish in aluminum foil to keep the peppers moist and prevent them from drying out. You can remove the cover during the last few minutes of baking to allow the tops to brown, if desired.

Allow for resting time:

Once the stuffed peppers are baked, allow them to rest for a few minutes before serving. This will help the flavors to meld together and make them easier to handle when serving.

Garnish and serve creatively:
