Comforting Classic Chicken Noodle Soup from a Costco Rotisserie Chicken!

Here’s a comforting and classic recipe for Chicken Noodle Soup using the meat from your shredded Costco rotisserie chicken! This dish is perfect for a cozy night in or when you need a little comfort food.

This recipe is written using two cups of rotisserie chicken but you can use three cups if you want a heartier meal.

The recipe uses store bought chicken stock.  You can make your own stock from the bones of a couple rotisserie chickens but I really don’t think it is worth your time!

Bowl of Chicken Noodle Soup

Ingredients:

  • 2 cups shredded rotisserie chicken
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 2 cups egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Vegetables:
    • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Cook the Soup:
    • Pour in the chicken broth and bring the mixture to a boil. Add the bay leaves, thyme, rosemary, salt, and pepper.
    • Reduce heat to a simmer and let the soup cook for about 15 minutes, or until the vegetables are tender.
  3. Add Noodles and Chicken:
    • Add the egg noodles and shredded chicken to the pot. Continue to simmer for about 10 minutes, or until the noodles are cooked through.
  4. Final Touches:
    • Remove the bay leaves. Taste and adjust seasoning if necessary.
    • Serve the soup hot, garnished with fresh chopped parsley.
